Choosing a still is easier when you start with what you want to make, the batch size you will realistically process, and the space and services available. Compact and straightforward: choose an air still for smaller batches, simple storage and no cooling-water connection. Current options include the Still Spirits Air Still and Air Still Pro.

Choose by process and scale

Compact air-cooled stills

The Still Spirits Air Still is the simplest current option for compact storage and smaller runs. It is self-contained and air cooled, so it does not need a cooling-water connection. This category is currently represented by Still Spirits; the in-stock Pure Distilling and Essencia systems are larger water-cooled designs.

The Air Still Pro adds separate reflux and pot-still modes in a similarly compact appliance. It suits someone who wants to explore both cleaner neutral spirit and more flavour-forward distilling without moving to a full-size boiler and condenser.

Reflux systems for clean neutral spirit

Reflux stills are designed to separate and refine vapour more thoroughly, making them the usual choice for clean neutral spirit that will later be filtered or flavoured. They need a suitable boiler, controlled cooling-water supply, safe drainage, ventilation and continuous supervision.

Still Spirits: the CREATE+ T500 Distilling System combines a 25 litre boiler with the established T500 reflux column. Copper and stainless configurations, complete distillery kits and the more advanced T500 Pro are also available.

Pure Distilling: the Pure Distilling Reflux Kit combines a 30 litre boiler, copper reflux condenser and supporting equipment. Separate reflux condenser and boiler options are available for compatible existing setups.

Essencia: the Essencia Express Copper Reflux & Pot Still 50L is the larger-capacity choice and can be configured for reflux or pot-still use. It suits experienced users who will make use of its additional volume and flexibility.

Pot stills for flavour and character

A pot still carries more of the wash’s original aroma and flavour into the distillate. That makes it the better direction for whisky, rum, brandy and other styles where character is desirable. It is not intended to produce neutral spirit as cleanly as a reflux column.

Still Spirits: the CREATE+ Alembic Distilling System combines a 25 litre boiler, copper dome and condenser. The dome and condenser are also sold as components for compatible setups.

Pure Distilling: the Pure Distilling Alembic Distilling System combines a 30 litre boiler with a copper dome and pot condenser. Separate components are available when you already own a compatible boiler.

Essencia: the Essencia Express 50L can be reconfigured as a copper pot still without buying a separate condenser system.

Dual-purpose systems

If you want to make both clean neutral spirit and characterful spirits, compare the compact Air Still Pro with the larger Essencia Express 50L. The Air Still Pro prioritises compact convenience; the Essencia prioritises capacity, modularity and a more hands-on full-size process.

Complete system, kit or components?

A complete system is usually the clearest starting point because it brings together a compatible boiler and still head. A broader distillery kit may also include fermentation, measuring, filtering or flavouring equipment. Individual condensers, domes and boilers make sense when you already own compatible equipment, but connections, lid diameter, heating power and included accessories differ between brands. Check the exact product page rather than assuming components are interchangeable.

Practical checks before choosing

Space: measure bench area and overhead clearance before comparing capacities.

Cooling water: standard Air Still models are air cooled; full-size reflux and pot-still condensers require controlled water and a safe drain path.

Batch size: choose the volume you will realistically ferment, process and store, not simply the largest available boiler.

Spirit style: reflux favours clean neutral spirit; pot distilling retains more character.

Complexity: complete systems simplify compatibility, while modular component systems offer more room to change later.

Supervision: every still must be operated according to its instructions and must never be left unattended.

Filtering neutral spirit

Filtering is most useful when making clean neutral spirit for flavouring. It can reduce unwanted aroma and flavour after suitable dilution.
