How to Make Spirits With a T500: Complete Guide

A reliable T500 result starts well before the still is switched on. This guide follows the complete pathway from making and clearing a suitable wash through to reflux distilling, filtering and flavouring.

The complete T500 pathway

  1. Clean and sanitise the fermentation equipment.
  2. Make the wash using a matched yeast pack and the exact sugar and temperature instructions on that pack.
  3. Confirm fermentation is complete with stable hydrometer readings.
  4. Degas and clear the wash before transferring it to the boiler.
  5. Set up and operate the T500 model exactly as its manufacturer instructions specify.
  6. Dilute and filter neutral spirit where appropriate.
  7. Flavour, blend or age the finished spirit according to the product directions.

Equipment checklist

Core equipment

  • A complete T500 system, or a compatible boiler, lid, column and condenser combination.
  • A fermenter, mixing equipment and cleaning and sanitising products.
  • A brewing hydrometer and test jar for the wash.
  • The yeast, fermentables, nutrients, carbon and clearing products required by your chosen wash recipe.
  • Suitable collection and storage vessels.
  • A reliable cooling-water supply and safe drainage path.
  • Good ventilation, stable bench space and enough overhead clearance.

Depending on the result you want

  • A suitable spirit filter and fresh cartridge for clean neutral spirit.
  • An alcoholmeter for measuring distilled spirit. A brewing hydrometer is not designed for this job.
  • Spirit essences, bases or ageing products.
  • A water-flow controller where needed for stable cooling-water management.

A complete T500 distillery kit can simplify the first purchase. If you are combining components, confirm that the boiler, lid, column, hoses and fittings are compatible before use.

Stage 1: clean before you begin

Clean all equipment that will contact the wash, then sanitise the fermenter, lid, tap, airlock, spoon and sampling equipment. Cleaning removes visible residue; sanitising reduces microorganisms. Both steps matter.

Stage 2: make a suitable wash

Use a yeast and nutrient pack designed for the result you want, and follow that pack rather than mixing instructions from different products. Sugar quantity, water volume, temperature and fermentation time vary between packs.

For example, the Still Spirits Classic 8 Turbo Pack includes yeast, carbon and clearing agents. Its instructions distinguish between a 6 kg sugar wash for faster fermentation and an 8 kg sugar wash for higher alcohol. Those figures do not apply automatically to every turbo-yeast product.

Stage 3: confirm, degas and clear

Do not judge completion from airlock activity alone. Take hydrometer readings on separate days and confirm they are stable within the range expected for your recipe. If the gravity is still changing, fermentation is still active.

Once complete, degas thoroughly and use the clearing method supplied with your pack. For separate Turbo Clear, the usual sequence is to degas, add Part A, wait one hour, gently add Part B, then allow at least 24 hours to settle. Check the current packet before use.

Transfer the clear wash carefully, leaving sediment behind. Distilling a cloudy wash can reduce quality and create avoidable cleaning problems.

Stage 4: set up the T500

  • Place the boiler on a level, heat-resistant surface in a well-ventilated area.
  • Allow enough overhead room for the complete column.
  • Connect cooling water and drainage exactly as shown in the instructions for your T500 model.
  • Keep the equipment and high-strength alcohol away from flames, sparks and other ignition sources.
  • Check that vapour and liquid paths are unobstructed. Never seal or block a still.
  • Stay with the still throughout operation.

Original T500 and current CREATE+ components are not identical. Use the manual supplied with your exact boiler, column and condenser rather than relying on settings intended for another model.

Stage 5: reflux distil the cleared wash

The T500 reflux column is designed to separate a cleaner neutral spirit from a suitable wash. Warm-up, cooling-water control, collection rate and shutdown steps must follow the manufacturer’s instructions for your model and local conditions.

Collect only into suitable vessels and handle the high-strength output as a flammable liquid. If the still behaves unexpectedly, stop safely and resolve the cause before continuing.

Stage 6: dilute and filter

Measure distilled spirit with a suitable alcoholmeter, then dilute as required before filtering or flavouring. Follow the filter’s maximum-strength and volume instructions. The Still Spirits EZ Filter cartridge, for example, is intended for one batch and up to 8 litres at 50% ABV.

Stage 7: flavour, blend or age

Once the spirit is at the strength required by the flavouring product, add essence or base exactly as directed. Common T500 mistakes

  • Starting a run before fermentation is fully complete.
  • Skipping degassing or distilling a cloudy wash.
  • Combining instructions from different yeast packs or T500 models.
  • Trying to measure distilled-spirit strength with a brewing hydrometer.
  • Filtering spirit above the filter’s stated strength.
  • Reusing a single-use carbon cartridge.
  • Running without stable cooling-water flow or adequate ventilation.
  • Leaving the still unattended.

New Zealand rules

New Zealand Customs advises that manufacture for personal use may qualify for an exemption from excise licensing and duty under the relevant legislation. Manufacture for sale or other commercial purposes is different. Check the current New Zealand Customs excise guidance and any other rules that apply to your situation before distilling.
