Hydrometer vs Refractometer: Which Do You Need?

A hydrometer and a refractometer both help you track fermentation, but they are not interchangeable in every situation. For most new brewers, a hydrometer is the first tool to buy. A refractometer becomes especially useful when you want quick readings from only a few drops before fermentation.

What is the difference?

Hydrometer

A hydrometer floats in a sample and measures its density relative to water, usually as specific gravity. It needs enough liquid to float freely in a test jar, but it works before and during fermentation and is the most straightforward tool for checking that fermentation has finished.

Refractometer

A refractometer measures how light bends through a small liquid sample, usually displaying Brix and sometimes an approximate specific-gravity scale. Only a few drops are needed, which is useful during all-grain brewing or when taking repeated readings before yeast is added.

After fermentation begins, alcohol changes the optical reading. You must use the original reading and a recognised alcohol-correction calculator, or confirm the result with a hydrometer. An uncorrected refractometer reading can make a finished beer appear sweeter or less fermented than it really is.

Which one should you choose?

  • New to brewing: start with a hydrometer and test jar.
  • Kit beer, wine, cider, mead or spirit wash: a hydrometer is normally the most useful single tool.
  • All-grain brewing: a refractometer is convenient for checking mash and pre-boil progress with minimal sample loss, but keep a hydrometer for reliable fermentation checks.
  • Very small batches: a refractometer reduces sample volume, provided you understand post-fermentation correction.

How to use a hydrometer

  1. Sanitise the sampler and test jar.
  2. Take a representative sample and leave enough room for the hydrometer to float freely.
  3. Lower the hydrometer gently and give it a light spin to release clinging bubbles.
  4. Read at the level specified by the instrument, usually at the liquid meniscus, and apply temperature correction if required.
  5. Record the reading and date. To confirm fermentation is complete, look for stable readings on separate days and follow the recipe or yeast instructions.
  6. Do not return the sample to the fermenter.

The difference between original gravity and final gravity can be used to estimate alcohol by volume. It is still an estimate, so consistent sampling and temperature control matter.

How to use a refractometer

  1. Calibrate it with clean water according to its instructions.
  2. Place a few cooled, well-mixed drops on the prism.
  3. Close the cover, point it toward a suitable light source and read the scale.
  4. Clean and dry the prism after every reading.
  5. Once fermentation has started, enter the original and current readings into a recognised correction calculator or verify with a hydrometer.

Common mistakes

  • Judging completion from airlock bubbles instead of stable gravity readings.
  • Letting the hydrometer touch the bottom or side of the jar.
  • Reading a sample covered in foam or bubbles.
  • Using a hot sample without temperature correction.
  • Treating an uncorrected refractometer reading as final gravity.
  • Returning a tested sample to the fermenter and increasing contamination risk.
