CL23 is a multi-purpose strain with a neutral sensory impact. This is a fast fermenting yeast with high stress and ethanol tolerance, producing exceptionally dry wines.
No rehydration required – add direct to the grape must and stir well.
For best results, ferment at 14 – 32°C
