Mad Millie Annatto is a traditional cheese colouring derived from achiote seed. It can create yellow-to-orange tones in cheeses such as cheddar, or add visual contrast to blue cheese, without affecting flavour when used at the recommended rate.
How to use
Measure the quantity specified by your cheese recipe and mix it through the milk at the instructed stage. Colour develops with concentration, so avoid guessing or adding more simply to speed the process.
Helpful information
Annatto changes appearance only; it does not replace starter culture, rennet, calcium chloride or other ingredients required by the recipe.
Do you need calcium support instead?
Mad Millie Calcium Chloride – 50ml supports stronger curd formation, particularly with pasteurised or homogenised milk. It performs a different role from Annatto and does not colour the cheese, so the two products are not substitutes.
