Lactose is a milk-derived sugar that standard brewing yeast does not normally ferment, so it can add lasting sweetness and a fuller mouthfeel to the finished drink. It is commonly used in milk stouts, dessert beers and recipes that need residual sweetness.
How to use lactose
Use the quantity specified by your recipe, dissolve it thoroughly in hot liquid, and add it at the recipe’s recommended stage. When developing your own recipe, start conservatively because sweetness is difficult to remove once added.
