Vintner’s Harvest Potassium Sorbate is a wine stabiliser used after fermentation to help prevent remaining yeast from multiplying and restarting fermentation when residual sugar or backsweetening is present.
Potassium sorbate does not reliably stop an active fermentation. Allow fermentation to finish, rack or clarify the wine, and stabilise before sweetening or bottling.
What to use with this stabiliser
Use it with an appropriate sulphite addition such as HBC Campden Tablets, following the directions for both products and your wine recipe.
Pack guidance: add ½ teaspoon per 5 litres after sulphite treatment. Do not use sorbate in a wine intended to undergo malolactic fermentation.
