How to use malic acid
A typical starting guide is approximately one teaspoon per 5L, added only as required. Dissolve a measured amount in a small portion of liquid before stirring it into the batch.
Acidity is easier to increase than remove, so make small additions and taste or test between each one. The ideal amount depends on the fruit, starting acidity and desired finish rather than a fixed dose for every recipe.
