Vintner’s Harvest Tartaric Acid is used to raise acidity in wine or must when testing shows adjustment is required. Tartaric acid is the principal stable acid used in grape winemaking and should be added progressively rather than by guesswork.
Suggested dosage
The pack guidance is 1 teaspoon per 5 litres as required. Dissolve a measured addition in a small quantity of must or wine, mix it thoroughly into the batch, then reassess before adding more.
Helpful information
Acid adjustment changes flavour as well as chemistry. Use a calibrated pH meter or suitable test method where precision matters; broad-range pH test strips can provide only an approximate indication and do not measure titratable acidity. Keep records of every addition.
