Pectinase, also known as pectolase, breaks down pectin in fruit. Used during fruit-wine or must preparation, it can improve juice extraction, flavour release, yield and eventual clarity.
How to use
One 1g sachet treats up to 25 litres. Add at the stage and temperature specified by your recipe or the packet directions; excessive heat can reduce enzyme activity.
Helpful information
Pectinase addresses pectin haze, not every possible cause of cloudy wine. Good fruit preparation, fermentation practice, settling and suitable fining may still be required.
