A 100g brewing-water mineral used to increase alkalinity and raise mash pH, most commonly in dark-grain recipes.
How to use
Measure water chemistry and mash pH first, then dose according to a brewing-water calculation. Calcium carbonate dissolves poorly in plain water and should not be added simply because a beer is dark.
Helpful information
Excess can push pH too high and produce dull or chalky flavour. Use accurate scales and make small, evidence-based adjustments.
